February 10th, 2010I am loving this soup! It’s so easy. I think the cheese definitely makes the soup. Just a warning, if you use the red pepper flakes, it does have a little kick to it. When I made it, I used cheese tortelloni and added diced chicken breast.
Ingredients
- 3 cups chicken broth
- 1 pkg. (9 oz.) refrigerated chicken-filled tortelloni or ravioli
- 1 can (14.5 oz.) fire roasted diced tomatoes, undrained
- 1/4 tsp. crushed red pepper flakes or black pepper
- 3 cups packed baby spinach leaves
- 1-1/2 cups (6 oz.) Sargento® Bistro® Blends Shredded Italian Pasta Cheese, divided
Directions
- Bring broth to a boil in a large saucepan over high heat. Add tortelloni; reduce heat to medium and simmer 4 minutes.
- Add tomatoes and pepper flakes; simmer 7 minutes or until tortelloni is tender. Stir in spinach just until wilted.
- Place 1 cup cheese into 4 shallow bowls. Ladle stew over cheese; top with remaining cheese.

February 9th, 20101. I wanted a king size bed for several years. We finally got one, it’s wonderful! I also want a new bed room set, that’s not in the budget right now. So, rather than buy a new headboard that goes with a set that we can’t afford right now. We decided to make our own. I wish I had a before picture. It’s made from three hollow doors. I think it turned out pretty good!
2. My MIL has been nice enough to offer to watch the kids for us once a week so that we can have dinner alone. Firkin is our first stop. Their appetizers are so good! I’ve decided that I’m not even going to order an entree, just appetizers. Can’t wait!
3. I added these new designs to my shop over the weekend.
4. I need a vacation…somewhere warm. This picture was taken during our honeymoon in Hawaii.
5. Instead of a warm beach, this is what I woke up to. They are calling for up to 12″, more is some areas.
6. I’m looking forward to seeing 101 Dalmatians in Chicago next week. I can’t wait to see how they handle all the puppies.
7. I am anxious to get the invitations ready for the boys’ birthday party. I hope the vision I have for them works out. I ordered these as part of them.
8. I am so envious of people and their photography skills. Ainslie is one of those people. I have had the privilege of working with on several projects. I am always so eager to get her emails and see the images she sends.
9. I don’t think a 10 on Tuesday post would be complete without a picture of the boys.
10. Those sweet little boys are sleeping, I better run and get something done. At the ripe old age of 22 months, Lucas has decided he doesn’t really need a nap anymore…not a long one anyways.
10 on Tuesday
February 2nd, 2010In an effort to try and post more regularly, I am going to try this out. One of my favorite bloggers, Jenn, does this and I love it! Although my photos may not be half as good as hers, nor my writing as good, I am going to take a stab at it!
1. Those of you that know me personally know that I have had the camera in my boys face since they were born. Well, I think I have created monsters. All I hear all day is, “picture! picture!”…and that’s usually when they have their pajamas on and food all over their face. They like to make funny faces. Silly boys.
2. I have been SWAMPED with airplane party orders! It’s crazy to think that a party I threw as inspired similar airplane parties all over the world…literally. One of the latest ones I did was for a party planner in Brazil. I love looking at the pictures on her blog…maybe I will learn a new language at the same time! In case you were wondering, this is how I get work done.
At least my order misprints don’t go to complete waste!
3. We are working on potty training our oldest. I think it’s going pretty well over all. I went and bought diapers yesterday for both boys. If that isn’t motivation to get them out of diapers, nothing is! Those things are expensive!!
4. Coming up with 10 things is hard. This may be more difficult than I thought!
5. I am in party planning mode for the boys birthday party. Since their birthdays are only 3 weeks apart, we are going to do a combined party. I had a few ideas in mind…circus, dinosaurs, bugs. Looks like bugs is the winner.
6. I’ve had serious designers block lately. I really want to work on a few new designs…I just don’t have the motivation.
7. I have been without my laptop for a week. It has made my life completely chaotic….to put it mildly. They came out and fixed it today. I can’t tell you how happy I am to have it back.
8. We have to get D a new bed. He has a crib that converts to a toddler bed, which is how it is now. Problem is, he hates his mattress. He will sleep in his bed for naps. If he sleeps in his room at night, he ends up moving to the floor. So, for the last few weeks, we just let him sleep in our room on the floor. L will go to bed in his room, but ends up on our floor in the middle of the end. The thing is, we all end up getting more sleep this way. But we definitely need to get D a new bed, hopefully he will want to sleep in it.
9. My mom bought me a new runner for our hallway for Christmas. So, of course, I had to get the matching rug for the entryway.
I happen to love both rugs! But it’s such a domino effect! Because now I need new pillows (and possibly a new cushion too) to match the rug!
10. This is going to be more difficult than I thought! We’ll see what I can up with next Tuesday!
